At the August opening of Misipasta, a trendy retail shop and restaurant in Brooklyn, New York, I sat down and ordered a glass of red wine while a friend inquired about a spirit-free cocktail.
What landed on the table was a pale yellow, spritz-style libation that looked so good I had to try it. The floral and lemony elixir was delicious, refreshing and utterly winelike—so much so, we both questioned whether it was actually booze-free.
